Refrigerator pickles

Perhaps it is my German upbringing or that my father lived through the depression that explains my minimalist belief that no foodstuff should ever go to waste.

Now that it is cucumber season in Virginia, i have taken to saving old jars of pickle juice and slicing up fresh cucumbers and refrigerating them in the brine for a couple of days and then feasting on them after a nice long bike ride. It seems like a good way to replenish electrolytes, after i heard a lacrosse referee extoll the virtues of pickle juice after he had run up and down the lacrosse field for ten hours working at a tournament.

One can also add Super Tonic from Fierce Ferments if one wants to bump it up a notch.

Beware, some of the cucumbers may be aliens. ….
