White bean, andouille sausage soup

As we are in Southern wimpy winter and after checking a number of recipes I decided on a white bean, andouille sausage soup project. The recipes suggested the holy trinity plus garlic and I thought what a perfect way to use up some of that extra Thanksgiving turkey fat to sweat the veggies along with red pepper.

Then just add the sausage, in my case the remaining turkey giblet dressing stock, other veggie stock and kale. And then add at the end the white beans, some fried bacon and some parsley.

Very  tasty.
