Avocado oil mayonnaise

It seemed like such a good idea to make scratch mayonnaise using avocado oil and egg yolks and lemon and vinegar but the first attempt yielded a “broken” mayo and the second attempt with an additional yolk and very slow addition of the first attempt oil liquid yielded a very bitter tasting mayo.

It seemed like it would have been perfect for deviled. At least it was my first scratch mayonnaise and  a successful recovery of broken mayonnaise.
