Pickled beets, flowering German gold tomatoes

I had not wanted to lug beets around all day after the Alexandria Farmers six weeks ago so waited until the Saturday RVA South of James Farmer’s Market to get some starter material for pickled beets, here shown with heirloom German Gold tomato flowers.

I had to improvise as I could only add a portion of kim chi liquor which I augmented with some pickle brine, apple cider vinegar and sliced new onions. In the past I thought that beets just tasted like dirt but I have come around to the fresh pack pickled taste and especially the electric color.
