Summer refreshment, on the road, Jersey City

It’s summer so it’s time for some simple, refreshing summer classics on the road from Richmond in my apartment AirBnB extension in Jersey City.

At least the beets were from the Grove Street market even though the new ginger had yet to be harvested. I even added some whey from a tasty yogurt to get the fermentation started and now I’m enjoying refrigerator cool kim chi pickled beets.

Combined with Ed’s simple salsa, both very refreshing on a warm day.
