Sweet potato gnocchi, Pt. II

We had some leftover sweet potatoes so I convinced myself to have another go at a simpler version of sweet potato gnocchi. The first version had been an excellent dish but very time consuming to prepsre. This simpler version used only mashed sweet potatoes, egg, salt, nutmeg and flour, as I was not feeling like garlic that day. This results in a sweet potato oobleck that I dusted in flour and rolled with my fingers into skinny logs and cutting off 1 inch slices and boiling.

One could add ham pieces for an expanded taste.

Enjoy the healthy sweet potatoes.
