Liver and onions

I was just back from a long western road trip to see family and friends

and thought I would get back into volunteering by donating a pint of blood to the Red Cross, this being somewhere between 80 and 100 lifetime donations (old paper records unavailable). Being older than 65 this loss of 1/8 of my hemoglobin really seems to slow me down for a couple of days so I decided to boost my iron by making that classic from my youth, liver and onions, but this time on a bed of spinach with some quinoa.

Delicious and all that extra iron was good for building back the oxygen carrying ability of the blood.
