As we are on the way to Spain April, Spanish egg and bread omelet, substituting finely diced yellow potatoes, seemed a pretty simple meal frying in potatoes in olive oil, removing them and frying onion, green pepper and garlic, seasoning with smoked paprika and thyme, adding a can of diced tomatoes, simmering and adding the eggs.
Although this is a Spanish recipe it reminded me of some Huevos rancheros I had eaten or dreamed of in the past.
